i assume lopping off the top wind of the coil isn't ideal (affecting spring rate?), but this isn't a performance car -- how bad could it be?

otherwise, what replacement springs should i be looking for? donor vehicle?

Look up how to calculate spring rates. You can estimate what you have now, and also what they'll be as you cut coils off.
