if i use mechanical gauges what do i do with the temp sensor wire and oil wire. will it throw codes or is there another place i could put the mechcanical temp senser and oil sender in my 87 sefi302 cv wagon

it will not throw codes. in place of the gauges the idiot lights will not work better to use gauges.

I know there are T-fittings you can use for the oil pressure sender, so you can put both in at once. IDK if such a thing exists for the coolant sender, but you could probably fab one up.

I forgot to add you can still use the idiot light with t adapters using electric gauges

I teed in the oil pressure tubing on mine, and just pulled out the idiot light sender from the intake manifold and installed the temp gauge. Idiot light won't turn on for high engine temp anymore, but who cares? I've got a gauge for that anyway.
