Yeah, but you will like not having to adjust your rear brakes all the time.
you're absolutely right about that. I'd obviously prefer discs for performance but if I can get away with only replacing some shoes and springs I will. I can't do the rear end work myself, so I need to go talk to the guy that will be doing it for me and we'll have to assess the state of the rear end and brakes and see what needs replacing. I don't yet know what is bad and what isn't but I'm suspecting everything is old

You hear any noises from the rear? Humming, howling, growling, anything like that?
Keep your springs, save your money, as long as they're not over extended or have nicks in them, just reuse your old ones. I've never been able to find a kit that had the same size springs as the ones I took off.
not so much 'pulled' as it was 'beat with a hammer' but yeah...the shoes looked okay but on the way out. i think i could probably just put new shoes on but i've been wrong about many things before.

Technically speaking, you should have the drums resurfaced or replaced when putting on new shoes.
any reason not to buy used ring and pinion gears? as long as there are no chips gouges etc in the gears
They'd be harder to set up. Each ring and pinion are different, just as each carrier, and differential housings are different.
Different Pinion depths, different backlash and whatnot. If you don't set it up the same way the two gears have been wearing together for who knows how long, you'll get noise, or you'll wear the gears out faster. It can be done, don't get me wrong, but it takes more time.
I personally would recommend it. Unless you are using the ring and pinion on the same carrier in the same housing. If there's no damage to the gears, just put it back exactly how it came out (just with new bearings and seals)
exactly what bearings and seals and junk should i be buying if i'm not replacing the open diff and ring/pinion? it will be getting new axles and new brakes.

Dunno about the bearing kit, but if you're redoing the drum brakes (1990 right?) I suggest you replace the hardware too, something like BENDIX Part # H7224DP, Rock closeout $1.91.
