Will bad sensors show up as a fault code, and/or bad mpg? Thinking about waiting to change them till I absolutely have to.

If they're really fubar, they will set codes but after 60-75k they aren't accurate anymore. Its kinda rare for them to completely and totally shit the bed, but the response times do slow and the accuracy deteriorates with use.

Im not sure mine have ever been changed (odom quit at 105k) and I really dont want to replace them (gotta a new tranny on the way) now. Ill see what i can get for mpg and go from there. How hard are my O2 sensors to get to anyway, and what tools are needed aside from the special one for the sensors?

They're a bit of a bitch to get at but if you have the O2 sensor wrench, thats the only tool you need. I don't know if it would be easier to access them with the tranny out from underneath or not. If your fuel mileage is OK, they probably aren't shot but if you have money to burn, you won't hurt yourself by changing them.
