Here's my combo and I really like it, but I could see the low-end torque drop due to the lopo motor...
Mustang headers (stock)
(2) Hi-flo catalytic converters from Catco
Custom H-pipe
(2) 3-chamber mufflers from Flowmaster
2.5" piping to plumb it all
It exits just behind the rear wheels on both sides. It sounds fantastic, I don't need to worry about replacing/removing catalytic converters come inspection time. It's really quiet at idle and low speeds, but definitely opens up when I romp it.
I asked LOTS of questions before ending up on this exact set-up because I am a very respectable individual and I HATE people who drive around with loud exhaust systems late at night. This allows me to cruise through anywhere as late as I want without disturbing anyone while still "speaking my piece" when the time comes.
For you, though, I'd recommend 2.25" piping- most of the guys will likely agree... and I paid over $900 for my system, but you can get the Flowmasters and Catcos on eBay for MUCH cheaper than they charge at the shops.
