Fords dont actually need oil pressure in order to run. Hell, a lot of 302's don't make any to speak of, but run fine. They need oil flow, which is rather more difficult to monitor. As long as you aren't out of oil, its damn near impossible to have a situation where there isn't any oil movement happening in the engine. Make sure it doesn't run out and you're good. I really think the "Check Oil" light is about the most useful idiot light ever created. The red "replace engine" lamp just tells you that you're already boned.

My 5.0L 86 MGM had a "Check Oil" light seperate from the engine light, but this vehicle (the trim model with the 5.8L) doesn't have the check oil light, just the "Check Engine" lamp.

Oil flow being restricted means your cylinder heads are screwed, doesn't it?

means the whole engine is screwed. The crankshaft bearings aren't a metal to metal contact like a standard bearing. The parts float on a film of oil. If that oil isn't there, the parts meet and metal goes away really quickly. The cam bearings operate the same way.
