If oil is coming out the dipstick, replace the pcv valve. Otherwise you'll start blowing gaskets all over the place.

Regardless of your intake system, a Windsor engine takes 5 quarts of oil. Drain, replace oil filter, add 5 quarts. Run engine for a little bit to fill the oil filter. Let sit for 60 secs. Wherever the dipstick indicates, that's your full mark. The dipsticks on some (many?) panthers are incorrect, and mine reads full when there's 2-3 quarts in the fucker. On mine, actually full is right around the ford oval stamped on the dipstick.

Run a 10W-30 of your choice. If it burns (not leaks) more than a quart of that between 3000 mile changes, switch to 10W-40.

As far as fuel, it is unlikely with your setup that you need to run anything other than 87 octane "regular" gas. Pick a good brand such as Chevron or Shell or whatever else that isn't discount gas, and you'll be just fine.

      +1 on the PCV system.

In fact, considering you've gone from CFI to a custom carb system, have you converted the PCV system to just a breather on the valve covers?

5 quarts of oil with the filter. Be sure to drain both drain plugs, otherwise it will be way over full. 10w30 or 10w40 is whats usually used.

You really ought to have a PCV system if you don't have one. Breathers are OK, but you'll find with an older engine it will leave an oil film all over the place from blowby. Most carbs have a large vacuum port under the rear center which is intended for the PCV. It might be on the front center on the Edelbrock, I don't remember, but its got one on there someplace. A vacuum nipple on the intake manifold will also work, most intakes have at least one plug in them where you can install a vacuum tree for stuff like this.
