I'll replace the gasket when I put it all back together. I'm also going to replace the fuel pressure regulator and the red line that goes from the regulator to the manifold.
You're taking the intake off right? Go ahead and go to town with it with the carb cleaner. A tooth brush will help too. Intake manifold gaskets do go bad, (they can cause the same syptoms as a blown head gasket) and you can leak coolant into the combustion chambers, also can leak into the oil. How's your oil, are you losing any coolant?
Clean is good. You may actually find it helpful to soak it in some non-solvent degreaser. Purple power, simple green, greased lightning, spray nine, whatever you like. Spray Nine is the least caustic and will mess with the paint the least. The others may leave things slightly off-color but they work good. Use a round brush that fits in the holes to clean it up as best you can. Soak it for a while if you have the time, most of that crap will just come right out. Make sure you rinse it out well with water and blow it out before putting it back on.
