without a TPS to go by, the computer can't react to changing throttle positions to accurately calculate fuel mixture. It will produce a hesitation in throttle response and probably odd drivability. Unplugging sensors on an EFI system never fixes anything. It just forces the computer into fail-safe mode where it sticks known safe values in to get you home. Usually these values suck for economy and performance. If a sensor is bad, it needs to be replaced.

Disconnecting the TPS will force the ECM into limp-mode where it runs on "emergency" values from base-table. It's NOT a wise move. The ECM will have NO IDEA where the throttle blade is and it does a lot of calculations based on that information.
In terms of diagnosing the problem, that's helpful to determine if the TPS is bad or not, but if it's bad, you buy a new one, not just drive around with it disconnected!1989 Town Car Cartier: 3G Alt. Update: I changed the 170* T stat for a 192* one and changed the cap and rotor and the car seems to be running fine now. Put it under load on our dyno at work and ran it low speeds where it was missing before, and it was smooth. seems to be using alot of gas lately tho, or maybe thats just me enjoying the new exhaust.
