would a 2400 stall in my cv be to much or would it be ok with my 351? i have a bunch of parts left over from my mustang which include hardend input shaft, deep sump tranny pan, 2400 stall converter, huge tranny cooler with 5" fan, and a tranny temp gadge, would all this be a good choice for my cv.

Something like that...maybe as low as 1500.
When choosing a stall rating for a torque converter, you have to take into account the rest of the drivetrain. Like anything else, it has to be matched. But like Nick said, you're going to see far more of a benefit from rear gears than from a new converter.
If you decide to build up a wide ratio AOD at any point, that would be the time to go with a higher stall, most likely somewhere in the 2200-2400 range depending on your cam and axle ratio.

It'd blow the tires off easily enough....I'd toss everything on there.
