I just got my thermostat (motorcraft) and wanted to make sure it worked, so I threw it in a pot of boiling water and it looked like it opened up to about just about a half an inch (thickness of my pinky) Is that about normal?

I'd think so. They don't open much, which leads me to believe that's why it's recommended you take them out when doing chemical flushes & stuff.1985 LTD Crown Victoria - SOLD

Engine running at operating temp, the thermostat housing should be about the same as the coolant itself, running around 200-220F with a 195F thermostat on a stock lopo. Obviously this may be more after a soak time if you come home, park it, and run inside for about 10-20 minutes.
Never checked the oil pan temp.

close enough. I couldn't remember exactly what the value was. I knew it was more than 190 and less than 200... so I split the difference.

I've heard 190, 192, and 195. Whatever I can get in that range seems to do the trick.
